A pleasant bike ride south will take you to Casole D’Elsa, a typical walled military outpost that grew up on the frontline between Volterra and Florence. The main sight in its picturesque streets of medieval townhouses is the towering Collegiata di Santa Maria (with Museo Archeologico e di Arte Sacra, which has some interesting 14th- to 17th-century Sienese and Florentine canvases.
